My wife and I got back from Mexico last week. We did our dolphin swim at Parque Nizuc Wet & Wild water park www.parquenizuc.com They have various programs available, but the one we went for was an open water swim. You may not find much info on this as they only started the open water program a short while ago, although this was the most expensive option in my opinion it was more than worth the extra expense as you get to swim with the dolphins in the open water and not in a 'pen'. We paid 150 USD each (may be cheaper if you book before you go), which seems expensive but there were about 8 people in 2 boats and just myself and my wife swimming with 2 dolphins (for about 30 mins).
